Ironically enough, it’s a nutrition final.
Heirloom Tomato on Rosemary Toast with Olive Oil
Beans and Barley with Roasted Bell Pepper and Baby Bella Mushrooms. That’s some nice alliteration.
Lazy breakfast. Wheat chex/cinnamon life + pecans, dark chocolate chips, and almond milk.
Since I ate dinner at 4:00 for whatever reason, I was in need of a little snack. I have the weirdest eating habits.
Anyway, I had bought some whole wheat pizza dough from Trader Joe’s, basically for this purpose. I baked it plain and then drizzled on some honey. Yummm
Baby spinach with beets, goat cheese, pecans, and honey balsamic vinaigrette.
Trader Joe’s is my new favorite grocery store. I’m borderline obsessed. Their produce is cheap! It’s fantastic. They also have awesome products, like this package of baby beets! It was about $2, so really not too bad. Usually I love to roast my own beets, but this is such great, quick option.
Sweet Potato Oatmeal w/ Peanut Butter
Studying for my Nutrition final, listening to Pentatonix Christmas songs, and munching on a cinnamon baked pear. Tis the season!
Caprese Salad. Desperately in need of some fresh basil.
Today I made applesauce for the first time. I just cut them up (with the peel), cooked them up in water and lemon juice. Into the blender it went. Plus some cinnamon and a touch of honey. Voila.
Then the magic happened. I looked over at my peanut butter jar and thought, hmm…would that be weird? I went for it. I was running low on pb, so I didn’t get to put as much in as I would have liked. But lo and behold. It’s actually tasty. But why wouldn’t it be? It’s peanut butter. Which is amazing in anything. Duh.
Chocolate Avocado Cookies by Two Peas & Their Pod.
Absolutely decadent. Uses coconut oil and avocado instead of vegetable oil/butter.
(PS This was my first time using coconut oil. I definitely didn’t realize it was the consistency of wax. Odd.)

So I’m doing a social media project for class and I have to make a blog post (should be easy enough…I’ve had a bit of practice on here). So I decided to do it on healthy baking substitutions. I’ll be featuring this lovely recipe for black bean brownies!
And then there’s dinner! I definitely didn’t realize it was only 4 when I put this together…
But anyway, it’s a nice little lettuce wrap ensemble. Romaine, cucumber, tomato, turkey, jarlsberg cheese, jalapeño cilantro hummus. Some baby carrots on the side. A glass of apothic red. And a cute little fuji apple to top it all off.
