Back to school. After a crummy summer internship, I’m hoping this semester goes well! Except I have Medical Nutrition Therapy (Acute Care), Public Health Nutrition Management, and a really tough Macronutrient Biochemistry course…yikes. Not to mention, it was the first day of classes, and my professor is already talking about preparing for clinical internship next summer. Brain overload!
But back to school also means back to making “lunch for days.” This was quite the tasty stir fry. My family has been making recipes from Martha Stewart’s Great Food Fast for many years now, and the Beef Bulgogi recipe is one of our favorites. For this one, I used her recipe as a guideline and added in some extras. Instead of just peppers and onions, I added shredded carrot, green beans, and broccoli. It was so tasty, this one definitely won’t get old before the end of the week! Of course, just give me any dish with ginger and I’m one happy camper.

First attempt at bread: Crusty Italian Bread…delicious!
So I have now been in my “public health nutrition” internship for 3 weeks now, and this 9-5 business without getting paid is rough! But I’m getting my hours for the RD exam, so that’s all that matters!
One of the biggest changes I had to get used to was packing food for the entire day. What I’ve started doing is cooking up a big pot of something on Sunday, and then eating it for lunch the entire week.
This week is another recipe from my recent favorite, budget bytes. It’s called Sweet Chili Chicken and it is pretty tasty! I didn’t really listen to the directions, because it’s supposed to be cooked in a slow cooker. I actually just simmered everything together and then added shredded rotisserie chicken. But the flavor is great, and I’m sure the slow cooked version is sooo good.
Chunky vegetable and lentil soup! One of the RDs I’m working with this summer told me about a great blog, budget bytes, and this is the first recipe I tried. Very tasty! I’ll definitely be trying more!

My new toy. Sir Mix A Lot. My boyfriend surprised me with this for no reason. I couldn’t believe it! Finally going to experiment with bread, the one thing I’ve never tried to make :)
