Guess what guys……..I’m going to ITALY this summer!!!!! Which is super exciting. Which made me think about my last trip to Italy. This was my brother and I back in 2009, overlooking Florence. Whoa, it’s crazy to think about how overweight we were!! And here we are now. I’m so proud of us :) And we’re going back to Italy together! I can’t wait!!
My grandfather gave this to my grandmother, and after he passed away, she gave it to me. I always assumed it referred to a spiritual quote, but I finally decided to look it up. And I found this lovely poem :)

The spiciest omelet ever…ok maybe not ever…but I didn’t have many fixins to choose from so I went with the “green chile and habanero chicken sausage” and that thing sure does have a lot of kick! Nonetheless, made for a tasty breakfast :)
One of my best friends from college is pregnant and I’m sooooo excited for her! Now I’m searching the internet for cute baby clothes to send her. I have baby fever. And she’s not even due for another 5 months. I guess I’ll have to start planning another trip to Alaska! I thought her wedding would be the first and last time I’d ever go (it was in the middle of winter), but maybe a trip in the summer would be nice :) And then I could meet her little bundle. Yayy babies! 

I love love LOVE panera’s new spinach power salad (sans the frizzled onions). Today, however, I had the time and desire to cook so I made a homemade version. Yum!
Finished volunteering at the hospital early today so I decided to make a fancy lunch. Spinach and Swiss stuffed chicken with mushrooms and onions in a white wine and dijon sauce. Quite tasty if I do say so myself :)
Not the healthiest of dinner choices, but it was leftover from the super bowl party! And Ina certainly did me right when she came out with these recipes. Devin’s Award-Winning Chili and Jalapeno Cheddar Cornbread. Delicious.
